Here’s another great recipe from the folks at Precision Nutrition.
The original recipe is done as turkey burgers, but I like simplifying and cooking in bulk so I doubled this and made it up as a meatloaf. I used my hand blender chopper attachment to make quick work of finely chopping the apples, mushrooms and onions.
This came out really juicy and with a nice hint of sweetness from the apples. It was a really nice change of pace from traditional meatloaf.
Or you can stick to the original recipe and form up some burger patties. (the amounts you see listed are for the doubled meatloaf version)
Apple Mushroom Turkey Meatloaf
2 lbs ground turkey breast
10 mushrooms, finely chopped
1 small onion, finely chopped
1 apple, finely chopped
2 teaspoon lemon juice
2 eggs
1 teaspoon salt
1 teaspoon garlic powder
Mix all ingredients together in a large bowl until well combined. Grease a 9 x 13 pyrex dish with a small coating of coconut oil and place turkey mixture in dish. Bake at 350 degrees. Meatloaf is done when the juices run clear after being pierced with a fork. Mine took about 30 minutes.

4 servings for men
To make as burgers:
Fry onions until brown (about 5 minutes). Add apples and mushrooms and stir-fry for an additional 4 minutes. Place all ingredients inot a large bowl and mix thoroughly. Form into patties and broil 4 inches from the heat, about 6 minutes per side. The burgers are done when juices run clear after being pierced with a fork.
