This recipe comes to us courtesy of a personal training client. She’s great at creating her own dishes by combining healthy ingredients! I found this to be a really nice change of pace over the basic meatloaf. 

Mediterranean Chicken Meatloaf

2 lbs ground chicken
1 small onion, chopped
1/2 cup Pine nuts
8 oz frozen spinach, chopped
2 eggs
1/2 cup breadcrumbs or quinoa flakes
2 cloves fresh garlic or garlic powder
1/2 teaspoon salt

Put all ingredients in a bowl and mix well to combine. Place in a loaf pan and bake at 350 for about 45 minutes, or until internal temperature reaches 165. 

Serve with a side of mixed vegetables and a small potato or a small portion of rice or quinoa for a complete meal.
